Celebrity chef, Julie Resnick shares recipe for preparing her “Vegan Tikka Masala Grilled Cheese”.

“Cheesy Vegan Tikka Masala Grilled ‘Cheese’ is what you need to make for lunch today! Made with vegan mozzarella cheese, sautéed red bell peppers, and a homemade tikka masala sauce, this gilled cheese is packed with flavor.” – Julier Resnick


  • ½ red onion, chopped
  • 3 cloves of garlic
  • ½ inch ginger
  • 1 green chili
  • 1 tbsp avocado oil
  • ½ tsp turmeric
  • ½ tsp coriander
  • 1 tsp red chili powder
  • ½ tsp garam masala
  • 3 small tomatoes (~ 1 cup diced)
  • 1 tsp kasoori methi optional
  • ¼ cup unsweetened plant-based yogurt
  • salt to taste
  • 2 slices of sourdough or your favorite sandwich bread
  • drizzle of olive oil
  • ½ bell pepper
  • microgreens or spinach


  • To make the tikka masala sauce, heat oil over medium heat. Then cook onion for a few minutes until translucent.
  • Add garlic, ginger, and green chili, and stir for a few min.
  • Add all the spices at once and add the tomatoes right after that to prevent spices from sticking to the pan. Add salt to taste.
  • When the spices begin to release their oils and excess water from the tomatoes has mostly evaporated, remove the pan from the heat and blend its contents with yogurt and 1/4 cup water. Be careful not to make it too creamy!
  • Heat again with crushed kasoori methi for a few minutes (optional).
  • Drizzle olive oil on one slice of bread and place that oiled side down on a pan over medium heat. Add cheese, sauteed red bell peppers, microgreens or spinach, and ~ 2 tbsp of tikka masala sauce. Top with the other slice of bread.
  • Press the sandwich lightly with the back of a spatula. Flip it when it holds together well (~ 2-3 minutes) and continue to press it for 2-3 minutes on the other side.
